  1. Dice the tomatoes, onion, garlic, bell pepper.
  2. Add some oil to the pan and heat it on medium-high flame.
  3. Cook the onion for a few minutes, then add garlic, bell pepper and cook until garlic starts to turn golden.
  4. Add cumin seeds and cook till fragrant (2-3 minutes).
  5. Add tomatoes and the spices. Let it cook on low-medium flame till a puree forms – lid on. (around 20 minutes).
  6. Add the eggs and cook on low flame with the lid on for no more than 3-4 minutes.
  7. Top it with greens and fresh ground black pepper..
