  8. cover the pan and let boil on low flame until the eggs are ready..
  9. sprinkle chopped scallion on top.
  10. slice and enjoy! its nice when the eggs are a bit soft inside. serve with fresh hot pita and a bowl of tahini. great for brunch with a glass of freshly squeezed orange juice :-).
