Instructions to make Instant Turkish Pide Traditional Ramadan Pide/Pidesi/Pidesh or Pita Bread No-Knead:

  1. First Up: In a large mixing bowl- Add in the Lukewarm Water, Salt, Sugar & Yeast- Mix everything well together until nicely combined….
  2. Then, in it add in the Maida & with the help of a wooden stick/spatula- Mix everything well together until nicely combined and well blended- Ensure, no dry Maida is left over to be mixed into the yeast mixture.
  3. Once done Cover it with a cling film wrap for the 1st proofing- for about 30-35 mins time, for the sticky dough to rise up well enough.
  4. After the given time period: You’ll notice that the Dough has puffed up to about 3-4 times than its original size in the beginning- deflate/degas the same to release its trapped air inside and its time to do the folding procedures since this one’s a No-Knead one.
  5. Now, take some water in a bowl- Dip both your hands in the water since the dough is extremely sticky (that’s how it should be for this type of breads), then simply hold from one end, fold on the other- rotate the bowl & repeat the same process for about 3-4 times.
  6. Dust the working surface with some flour- Dust your own hands with the same too…Drop the sticky dough on the flour dusted surfaces…knead it gently just for a minute or so to get a tensive pliable dough out of the same…Divide it into 2 portions & Cover it again with a damp cloth or a cling film to rest for just 5-6 mins time.
  7. Now, take one portion from it & keep the other one rested in the similar covered way till we finish working with the first one…Again, dusting the working surface with the flour make a flat-round shape with the first portion of the dough…it shouldn’t be too thick nor thin- Degas & flatten its surface well.
  8. Now, place this flattened dough on the already pre-lined baking dish/tray…& cover it once again with a cling film wrap for its 2nd or final proofing for about 25-30 mins time- Apply some oil on the cling film wrap so that, it doesn’t stick to the prepared & flattened Pide dough.
  9. Post the waiting period- Apply the egg-wash evenly on its top- Sprinkle some Nigella & White Sesame Seeds on that, for that added gorgeous looks, tastes & flavours…Preheat the oven at 200C for about 15 mins time before baking it for the next 18-20 mins time on the same temperature…(Differs with different oven settings).
  10. Once done: Take it out of the oven- Give it sometime to cool down a bit to be able to hold & cut into slices/portions…TIME, to ENJOY this immensely decadent & delectable savoury breads with your choicest kebabs, kormas, soups, any kinda chicken/mutton curries or simply with any Dips that actually suit your taste buds.
