  1. Pre heat oven to 200C.
  2. Mix milk and lemon juice together and let sit for 15 mins. The acid in the lemon reacts with the milk and it starts to curdle..
  3. Mix all the dry ingredients together in a large bowl.
  4. Add the buttermilk and water and mix. I use a wooden spoon but quite quickly you will need to mix by hand. I tip onto clean work surface that has been lightly floured..
  5. Once mixed, make into a ball them flatten down slightly. With a bread knife, score a cross about a 1/3 way through dough.
  6. Transfer to baking paper on a baking tray / stone and pop in the oven.
  7. Bake for 40 mins..
  8. Remove to wire rack, let cool and start eating! Enjoy.

While soda bread with add-ins like currants and caraway can be delicious, it's not at all authentic In Ireland, soda bread tends to be plainer and more restrained Here is a classic recipe adapted from Darina Allen, an Irish television personality and the owner of the Ballymaloe Cookery School in Shanagarry Stir in raisins. Using a sharp knife, make a shallow cross in top of loaf. Whisk remaining egg; brush over top. Remove from pan to a wire rack.
