  1. Peel sweet potato. cut them in half lengthwise, and then cut those pieces in half again lengthwise, This will give you very nice wedge shape. If they are very large, cut them in half on the short end, and then follow the same process (i.e., each side will yield 4 pieces).
  2. This step is optional but i find really helps add a wonderful aroma of rosemary to the dish. Wash the rosemary stalks and break them down for a minute in pestle and mortar. the rosemary will still look like rosemary, but it will break down the needles some, and that will help the aroma of rosemary go into the potatoes. Note: if you are using ground rosemary, it is very potent, so start with 1/2 tsp of powder, and go from there..
  3. Mix all the dressing ingredients, starting with 1 tbs of olive oil (more only if you need it). Note: if you are not using cheese at the end, you can add another 1/2 tablespoon of salt..
  4. You can do this in a bowl and then add sweet potatoes, or you can do it in a separate cup and then poor over sweet potatoes in a pan itself. Using your hands, mix the dressing with the sweet potato, making sure that every wedges is well covered in olive oil. If your sweet potatoes are not well coated, add another 1/2 tbs of olive oil..

  6. Cover by aluminium folk and bake for approximately 20 ' at 200C using the fan. Take out and mix the potatoes again so that different sides touch the pan.Bake covered for another 10-20’. Check that potatoes are soft by putting the fork through them, If it comes in and out easily, remove the aluminium foil and bake uncovered for another 3-5' so they get a more roasted feel..
  7. Take out of the oven let cool for a bit if you are adding cheese, so that it doesn't melt. If you are not using cheese, you will likely need to add more salt..
  8. Note: if potatoes are already soft when you check on them 20' in, skip the middle step, mix them, uncover and baked for 5-10'. This will depend on how large your pieces. if you oven doesn't have a fan function, you will need to stir the potatoes 10-15' so that they bake evenly (still covered under foil)..
  9. You can add pecans or walnut 1/4 or halves and goat cheese. You can also bake with nuts already mixed in, which will give them a nice roasted flavour, but I skip this because all good stuff from nuts disappear when terminally treated. Serve warm or cold – they keep well in the fridge for a few days. Enjoy!.
