  1. heat oil over medium high heat. add onions garlic and cok for 5 mins. add chile pepper, salt, pepper, and spices. cook for a minute stiring constantly.
  2. add tomatoes, tomato paste, honey, and vinegar. reduce heat to medium and cook for 12 – 15 minutes..
  3. stir in loose greens.
  4. press feta cubes into sauce.
  5. make indentations with spoon and crack eggs into them. gently drag spatula unto egg whites avoiding the yolk.
  6. simmer for 10 minutes basting egg whites.
  7. cover for 4 minutes and cook until eggs are cooked to your liking.
